I'd start with a pint of Strongbow. Then check out the British Library...when I was there 4 years ago, there were some awesome exhibits. Buy lunch at a Tesco or a corner market and eat in a park. Later, go to a play and/or a pub for more Strongbow or your beverage of choice.
(The Tower of London, Westminster Abbey, Buckingham Palace, and Hyde Park are nice places to see, too.)
I'm not a beer drinker, so I'm totally on board with 'library girl' as I am a cider drinker. A pint of 'what ever' is a beautiful thing in 'ol Blighty.'
If you’re 'cashed up' try a lunch from Harrods, and Selfridges has some weird and wonderful sweets in the confections corner.
I'm also a big fan of squirrels like Zac, but I think he is Ozzie, and we find squirrels really novel. You being an American probably won’t find them quite so mesmerizing ;-)

The British museum (they have the real Rosetta stone and a Library where Marx formulated socialism)
Ronnie Scotts Jazz joint in Soho.
The V&A for fashion and other interesting exhibits.
I hear the summer has struck over there so you may like to wander through Regents park (my fav squirrel haunt) and check out the semi naked brits desperate for some 'rays.'
Take a ride on the tube and see what ‘living with terrorism’ is really like.
Have you been there before? If it's a first trip I might take some sort of bus tour that gave me an overview of the whole city. If it's a repeat visit, then a walking tour of an area you like. Some museum for sure, if only for a couple of hours. (I touched the Rosetta Stone. I couldn't help it.)
Definitely pub time, tea in any random little shop, and walk walk walk. Take pictures!
